Short Rib Tacos w/ Jicama Wraps

Ingredients

TACO:
2 Packages of Jicama Wraps
4 lbs Boneless Beef Short Ribs (3 ̋ Cubes)
Salt
Black Pepper
1⁄2 Cup All Purpose Flour (for dredging)
1⁄4 Cup Butter
2 Tbsp Vegetable Oil
2 Shallots Diced
1 Carrot Diced
1 Celery Rib Diced
1 - 750 ml Bottle Red Wine
Beef Broth
2 Bay Leaves
2 Sprigs Flat Leaf Parsley

TACO SAUCE:
3 Tbsp Soy Sauce
3 Tbsp Sugar
2 Tbsp Gochujang
2 Tsp Sesame Oil

SLAW:
8 oz Red Cabbage Shredded
1 Onion Sliced Thin
1 Carrot Peeled and Grated
1 Bunch Scallions Sliced Thin
1 Tbsp Cilantro Chopped
2 Tbsp Rice Wine Vinegar
1 Tbsp Soy Sauce
1 Tbsp Pickle Juice

BRUSSEL SPROUTS:
1 Tbsp Vegetable Oil
2 lbs Brussel Sprouts Sliced Thin
1 Yellow Onion Sliced Thin
Salt
Black Pepper

Instructions 
1. Preheat oven to 325°F.
2. Season the beef with salt and pepper. Dredge the beef in the flour and shake off any excess. Heat vegetable oil in a large dutch oven over medium/high heat. Sear the beef on all sides until nice and golden brown. Remove meat and set aside.
3. Melt another Tbsp butter in the pot. Add the shallots, carrots, and celery. Cook until the vegetables have softened, about 10 minutes. Add the red wine, scraping any browned pieces off the bottom of the pot, and simmer until the wine volume has reduced by half. Add the beef back to the pot. Add the beef broth until liquid level is half the height of the contents of the pot. Do not submerge the meat in the broth. Bring the pot to a boil, cover with the lid, and transfer to the preheated oven. Cook for 2.5 - 3 hours or until the meat is very tender. Remove from the oven and allow to cool slightly. Strip the meat with a fork, cover and keep warm on the side until the taco’s are ready to be assembled.
4. For the Slaw: Combine all ingredients in a bowl. Mix well and set aside.
5. For the Brussel Sprouts: Heat the vegetable oil in a large skillet. Add the Brussel sprouts and onions. Salt and pepper to taste. Sauté until the vegetables have softened slightly.
6. For the Sauce: Add all ingredients to a bowl and whisk until ingredients are well incorporated.
7. Assemble the taco’s.
